When it comes to meal prep: I have not been the most organised in the past. In fact, I used to dismiss meal prep as a Sunday distraction and one of the last things I wanted to do on my weekend. But, oh how the times have changed. Finding fuss-free prep recipes that take, firstly, barely any time, and secondly, that make enough rations for the entire week, is a god send. In fact, these vegetarian meal prep recipes for the week have made me do a 180 on the entire concept.
